It's officially December which means I am in full holiday mode. I love the Christmas season so much for the cheer and traditions. One tradition I with friends is to bake Christmas cookies. Years ago when I first moved to Chicago we would stay up late baking cookies past midnight. There would be about ten of us girls that would only see each other once a year for this festive night. We would each bring a cookie and the ingredients. It was either a favorite cookie or a family recipe but we would all share. By the time the night ended there would be boxes of cookies for each of us and a night full of laughter.
A lot of us have moved or had families so we don't keep up the tradition but I started the cooking baking in Florida with my family over Thanksgiving and I am already getting text messages from my sister requesting more cookies. I will be sharing those recipes and I would love for you tell me what your favorite Christmas cookie recipes are too!
10 Tablespoons salted butter. softened
2 cups flour
In a bowl, use a hand mixer on medium speed to beat together butter and sugar until pale and fluffy, 2-3 minutes. Add egg and beat until smooth. Add flour and mix on low speed until just combined. Transfer dough to a work surface and form into a ball; half the ball and form each half in to a flat disk. Wrap disks separately in plastic wrap and refrigerate until chilled, 1 hour.
Heat oven to 350 degrees. Transfer one disk to a lightly floured work surface; using a rolling pin, roll out to 1/4" thickness. Using a 1 1/2 round or fluted cookie cutter, cut out rounds and transfer to parchment paper-lined baking sheets, spacing them 1" apart" repeat with remaining dough disk. Bake, rotating baking sheets top to bottom and front to back halfway through cooking, until cookies are set but not browned, 8-10 minutes. Let cool before serving.
