As soon as Summer arrives and I spot the first watermelon, it is time to make this favorite simple salad of mine. I sent my sister a photo of mine on Sunday and was inspired to make this Watermelon Feta Salad too. I love it because it is so simple and fresh and you can make just enough for one person or a whole group. If you are making a meal out of it, grill some chicken and serve with the salad for added protein.
This is a salad that I look forward to every Summer. It is refreshing and simple and the minute I see watermelon is in season, it is time to make this.
Ingredients:
Watermelon cubed
Cucumber
Greek Olives
Feta Cheese
Red Onion
Arugula
Lemon/Olive Oil
Salt and Pepper to Taste
Instructions:
This salad is so easy and great if you are one person or serving a dinner party. Just add more ingredients to the number of people you will be serving. I don’t think it keeps well for the next day so make just the right amount to serve and eat.
Cube the watermelon into bite-size pieces.
Put in a handful of arugula
Chop red onions, cucumber, and feta and toss in equal amounts.
Sprinkle in chopped greek olives. (these are my favorite so I go heavy on them) the salt balances out the fresh watermelon sweetness.
Drizzle your favorite olive oil on top with a squeeze of lemon 🍋
